Cream of Mushroom Soup, it was divine!
It is that time of year when comfort food seems to be the thing we long for, and it’s been a rough time here, I was really craving soup, and not just any soup, cream of mushroom soup. I had a big container of portabello mushrooms I needed to use, and I had everything I needed to make the soup. I was excited to give it a try.
I searched Pinterest for Keto recipes for cream of mushroom soup and there were many. I chose 2 that both sounded really good, one a little more complex than the other, and decided to combine them. These are the two recipes I based my soup on: Gluten Free Cream of Mushroom Soup and Rustic Hungarian Mushroom Soup.The basic ingredients were pretty similar but the Rustic Hungarian soup had a couple of interesting things like soy sauce (I used gluten free tamari instead) and added sour cream. Also from the first recipe instead of 1 cup heavy cream and 1 cup almond milk I used 2 cups of heavy cream since I didn’t have almond milk. One recipe called for sauteeing the onions in olive oil, the other in butter, I used both and I didn’t use any flour, nor the dill or paprika that the 2nd recipe called for. I kind of incorporated the basics from both recipes and then did my own thing.
The first recipe called for putting the soup in the blender once cooked to make it smooth and the second one didn’t. I used my immersion blender and blended it about half way because I like pieces of mushroom in my soup.
I am telling you it was so good, well, I just can’t tell you, but I was downright blissy eating it and I warmed some up for dinner tonight and there’s still enough for a few bowls yet. It is such a treat. I don’t cook much for myself, I tend to throw things together that are easy, I make eggs a lot or a tuna melt without the bread with sliced avocado with just about every dinner, I make things really simple, but I want to cook more, at least once a week make something really nice for myself, it’s part of self care. And I’m telling you for people who think the ketogenic diet is too restrictive, well, yes, you give a lot of foods up that aren’t good for you, sugar, flours (You can have almond or coconut flours and make lovely breads, biscuits and all manner of baked goods with alternative sweeteners, etc.), pasta, almost all fruit, and so on, but what you CAN have on keto is amazing. I am keto for life and I love it.
Tomorrow I am going to my daughter Rachel’s for Thanksgiving dinner. I am making mashed cauliflower to take and if that doesn’t sound exciting to you check out this recipe.
