The Experiment: Day 302 ~ Making Keto Chocolate Coconut Balls With Noni!


Tonight is the first Sunday Night Writing Group. I’m so excited I’m about to pop. I had everything ready except to go over things again today to prepare so it was a real treat that my dear friend Noni, who used to be here every weekend but hasn’t been able to come often anymore, was here this weekend. She came last night, we made dinner and watched our current show, The Crown, on Netflix, and got up and had a lovely morning having our coffee together. And before she had to leave for work this afternoon we made the keto treat we’ve been planning on making for a long time now, No Bake Coconut Snowballs. Coconut balls rolled in chocolate! All sugar free and keto friendly! I bought the ingredients months ago and we’ve just now been able to make them. We got all the coconut balls made this morning but they have to chill overnight. Tomorrow Noni is coming back and we will roll them in chocolate. You can click the link to see the recipe.

A couple of notes… the recipe calls for maple syrup which of course we don’t eat on keto. What we used is a perfect replacement, Maple Flavored Sugar-Free Syrup from Lakanto. All natural made from monk fruit. I use their monk fruit sweetener in my coffee in the morning. Also for the chocolate we are going to be using Lily’s sugar free chocolate chips sweetened with stevia. I will be storing these balls, when finished, in a bag in the freezer, a treat to have once in awhile. In my 9 1/2 months on keto I have not been one to make keto sweets, even though they were allowed, because I am really strict with the diet, I have a lot of weight to lose. But to have something special to have once in awhile is great. My therapist, who is responsible for me going keto, actually brought me some of these coconut balls to try which is how I learned about them. I swear, they taste like Mounds Bars! I’m telling you you don’t have to feel deprived on keto!

So with our coconut balls in the freezer Noni headed out for work. I did some watering in the garden and came in to my desk to get ready for the first class tonight. I am so excited. This has been a long time coming and now it’s here. I’m about to do a trial run going through my notes in a private Zoom room to have the feel of doing it on video, and then I’m going to take a little nap with the pugs. I will arrive in the room tonight a little early to greet people. Our work together begins in a few hours and we will be on our way.
